1 lb shrimp, raw
1 garlic clove diced
1 medium tomato, diced
1 cucumber, peeled and diced
2 tablespoons olive oil
One tablespoon coconut cream
Juice of three limes
1/2 tsp dried dill
1/2 tsp celery seed
1/4 tsp low sodium salt
1/4 tsp chili powder
Endive or big lettuce leaf, for serving
In a large sauté pan, heat the olive oil over medium heat. Add shrimp.
Add garlic, half the lime juice, and chili powder and continue to cook for an additional 3 minutes.
Add all other dry ingredients to coconut cream together with the rest of the lime juice.
Arrange the salad and add the shrimp. Dress and serve!
