- 1/2 lb shrimp, peeled and deveined
- 1/4 cup coconut milk
- 1 tsp fish sauce
- 6 gloves garlic, chopped
- 1/4 tsp each turmeric, cumin, low sodium salt
Heat olive oil in a large pan over medium heat. Add garlic and spices
Add shrimp and coconut last. Low sodium salt and pepper to taste and serve with a fresh squeeze of lemon.
Serve along side your choice of vegetable or fried cauliflower rice.
