- 2 whole beets (roasted)
• pinch of low sodium salt
• a drizzle of extra virgin olive oil
• 1/2 cup of any greens
• 1 Tbsp. raw sunflower seeds
• 3 Tbsp. apple cider vinegar
Roast 2 whole beets in tin foil at 350F for 40 minutes or until tender.
Let cool. Peel the skins off the beets and thinly slice.
Arrange in a circular pattern on a plate.
Add a pinch of salt and a drizzle of olive oil.
Top with bitter or mustard greens like nasturtiums (pictured here) and raw sunflower seeds.
Dress with vinegar and enjoy!
